The authentic congee cooked by a Chinese person is without stocks!.
Firstly, you wash the rice and then place one portion of rice to 5 portions of cold water into a casserole or a deep sauce pan!.Secondly, cook them with high fire until boiled, then turn the fire to lower and let it simmering!. How long it will be cooked depends on how you want the state of your congee!. If you want a rich one, you cook it longer until the water is dried up!. Congee is simple to make!. Its basically like cooking rice (asian, non glutinous kind) with excessive water - depends if you want it runny or a thicker consistency!.
Normally in asia its made plain - just with water and eaten with many condiments!. i!.e!. peanuts, salted duck eggs, salted fish, pickled radish, soy sauce, anchovies and whatever you are up for!.
A pleasant try would be boiling a cup of rice, at least 1!.5 inch submerged in water and a little bit of chicken stock!. Add minced chicken/pork/beef (better flavor than sliced) or fish slices even some diced potatoes if you like and boil till the rice grain looks disintegrating/breaking up - that way it would be soft enough and the flavor from the ingredients would have surfaced!.
Serve it topped with some spring onions or some garlic oil just for the authentic chinese feel and taste!.

Just buy it at an Asian market and make it in a rice cooker following the directions!. I've seen several packages of it-- different brands in the Asian market where I live!.Www@FoodAQ@Com
