What are some different ways to make sausage and pepper hoagies without using tomatoes or tomato base sauces?!

Question: What are some different ways to make sausage and pepper hoagies without using tomatoes or tomato base sauces!?
I am looking for a different way to prepare sausage and pepper hoagies!. I have always used tomatoes but just recently I went to a pot luck supper where sausage and peppers had been brought!. It was probably the tastiest version I have ever tried and there wasn't any tomatoes used!. It tasted kind of sweet and it looked like a light au jus sauce was used, too!. Has anyone ever tried this or maybe makes something similar!? I would love the recipe!. :0) Thanks!Www@FoodAQ@Com

They probably used sweet Italian sausage, not plain or hot sausage!. Some brands of sweet sausage are sweeter than others depending on how much basil and fennel have been used to make them!. Just brown the sausage on both sides in a fry pan with a drizzle of olive oil and then simmer, covered, for 30 minutes or so with a half cup of water!. Then add sliced peppers and onion to the pan with the sausages and a little more water if needed and continue to cook until the veggies are done to your liking with the lid on!. It creates its own savory juice!.Www@FoodAQ@Com

we never used tomatoes or sauce with ours!.
We grill the sausages, meanwhile we saute onions and peppers in a marinade like Dales or Moores and some water!. First use just olive oil and then add the sauce to it and then water to taste!. I use the water because the marinade is salty!. You could use a can of beef broth, I think that would be good too!. then serve it all on a bun with cheese sauce or provolone on top, mmmmmm!.

If youdont want to grill, just do the sausages in the same pan with olive oil til browned and then add the marinade or broth and let simmer with the peppers and onions!.Www@FoodAQ@Com

Brown sweet Italian sausage in a pan on top of stove, add lots of onions and peppers - they'll cook down a lot so use more than you think you need, allow almost a whole medium onion and a medium pepper per link of sausage, add a bit of water to the pan, lower th e heat, cover and let cook till onions and peppers are caramelized!. They create their own juice!.
It may sound like a lot of onions and peppers, but they really do cook down and when I make them I use more than I've specified here!. Www@FoodAQ@Com

My father used the make sausage and peppers all the time and pour it over grits!. Its simple, you panfry or grill your sausages and meanwhile, you saute your onion and peppers, turn it down the heat and let them cook slowly, they create their own juice without broth or too much salt!. 1 red bell pepper, halved and seeded
1 small onion, peeled and cut in half crosswise
2 teaspoons olive oil
salt and pepper to taste
1 tablespoon olive oil
4 (6 inch) sandwich rolls, split and toasted

Preheat an outdoor grill for medium heat!. Lightly oil grate, and set 4 inches from the heat!.
Pierce the sausages in a few places with a fork, and set aside!. Slice off the bottoms of the onion halves so they will sit flat on the grill!. Brush the bell pepper and onion halves with 2 teaspoons of olive oil!.
Place the sausages, onions, and peppers on the preheated grill!. Cook and turn the sausages until well browned and juices run clear!. Cook vegetables until tender and peppers are slightly charred!. Remove vegetables and sausages from the grill!.
Place the peppers in a paper bag, close, and cool slightly!. Remove and discard the charred skin from the peppers; slice peppers into strips!. Slice the onion halves!. Place salt and pepper to taste, and 1 tablespoon olive oil in a bowl!. Add the peppers and onions, and toss until evenly coated!.
