Note: Bratwursts are often sold on German street corners!.

Ingredients:
6 bratwursts
12 ounces or 1 can beer
1 medium-sized onion, chopped
6 peppercorns
4 cloves
6 hard rolls

Directions:
1!. Place the bratwursts, beer, onion, peppercorns, and cloves in a 3-quart saucepan!.
2!. Simmer for 20 minutes!. Drain!. Grill the bratwursts 2 to 5 inches from the charcoal for about 10 minutes, or until browned!.
3!. Sprinkle with water to form a crisp skin!. Serve in hard rolls with potent mustard!.


Sauerbraten

Note: Beef is a typical part of the German diet!.

Ingredients:
5 to 6 pounds beef round roast
2 onions, sliced thin
1 carrot, diced
1 stalk of celery, diced
2 cups red wine vinegar
1 tablespoon salt
1 tablespoon mixed pickling spices
1/2 teaspoon dried thyme
1 sprig fresh parsley
4 tablespoons butter or margarine
3 tablespoons flour
2 tablespoons red currant jelly
5 gingersnap cookies, crumbled

Directions:
1!. Put the roast into a deep bowl!. Mix the vegetables, vinegar, seasonings, and herbs and pour over the meat!. Cover the meat and refrigerate it for 2 to 3 days, turning the meat once or twice a day!.
2!. Remove the roast from the marinade and wipe it dry with a paper towel!. In 1 tablespoon margarine or butter, brown the meat in a Dutch oven!.
3!. Remove the meat and melt the remaining margarine or butter in a pot!. Blend in the flour and add the strained marinade and the meat!.
4!. Cover and simmer for 2 1/2 to 3 hours, or until the meat is very tender!.
5!. Remove the roast and blend the jelly and 5 gingersnaps (crumbled) into the juices in the pot!. Add more gingersnaps if necessary to thicken the mixture, or add some more jelly!.
6!. Serve the sliced meat covered in gravy!.


Grüne Bohnen mit Zwiebel und Speck
Green Beans with Onion and Bacon

Ingredients:
1 pound green beans, cut
1 cup salted boiling water
4 to 6 slices bacon
1 small onion, chopped
1 tablespoon flour
Salt and pepper, to taste
1 tablespoon vinegar
1/2 teaspoon sugar

Directions:
1!. Briefly cook the green beans in the salted boiling water!. Drain the beans but save the liquid!.
2!. Sauté the bacon until it's almost entirely cooked!. Add the onion and sauté it until it's soft!. Use 1 tablespoon bacon fat with the flour and cook it until it's lightly browned!. Slowly add up to 1 cup of the bean cooking water!.
3!. Cook until smooth, seasoning to taste with the salt and pepper!. Add the vinegar and sugar and serve this sauce over the beans!.

Gingerbread

Ingredients:
2 3/4 cups sifted flour
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 cup chopped pecans
1 egg, slightly beaten
1 cup dark corn syrup
3/4 cup light brown sugar
1 tablespoon lemon juice
1 teaspoon grated lemon rind
1/2 cup sifted confectioners' sugar
1 tablespoon water

Directions:
1!. Sift together flour, soda, and spices; stir in nuts!.
2!. Beat egg and add corn syrup, sugar, lemon juice, and rind and mix well!. Stir in the flour mixture!.
3!. Divide the dough in half and put it on greased and floured baking sheets!. Flatten dough with moistened hands to 1/8 inch thick!. Bake in 400°F oven 13 to 15 minutes, or until lightly browned!.
4!. Remove from oven and brush with icing made by mixing confectioners' sugar with water!. Cut while still warm!. Cover and store in a tightly fitting container!.


Berliner Krapfen
Jelly Doughnuts from Berlin

Note: These are a common homemade pastry!.

Ingredients:
3 to 4 cups unsifted flour
1/4 cup sugar
1 1/2 teaspoons salt
1 1/4 cups warm water (105°F to 115°F)
1 package active dry yeast
2 egg yolks, beaten
1/4 cup butter or margarine
Grated rind of 1 lemon
1/4 cup plum or apricot jam

Directions:
1!. Mix the 2 cups flour with the sugar and salt!.
2!. Make a well in the center and add 1/4 cup warm water with the yeast!. Allow this mixture to rise for 20 minutes!.
3!. Add the egg yolks, remaining water, and butter!. Beat until well blended!.
4!. Add lemon rind and remaining flour until a soft dough is formed!. Knead for 5 to 10 minutes, until the dough is smooth and elastic!.
5!. Place the dough in a lightly greased bowl!. Cover and let rise in a warm place until doubled in bulk, about 1 1/2 hours!. Punch the dough down!.
6!. On a lightly floured board, roll the dough until it is 1/4 inch thick!. Cut the dough into 2-inch rounWww@FoodAQ@Com
