Answers:
I was the same as you, used the dried stuff for ages then came across it!. It tastes exactly the same! only when you try to grate it to use in a recipe it stains everything- the counter, the metal on the grater, the spoons, the pots, its just not worth it!.!.!.!. consider yourself warned!! : ) Www@FoodAQ@Com

Fresh Turmeric looks like fresh ginger root and is used just like fresh ginger and in tandem with fresh ginger!.
In India, a sweet (Laddu) is made with Besan (Chickpea flour), lots of fresh turmeric, fresh ginger, fried Gond (tree sap), Jaggery, lots of Ghee, Fenugreek seeds and leaves, and some Ajwain (Carom)!. It is given during first three days after a woman births a baby!. The Turmeric is supposed to reduce inflammation and help body heal!. The Laddu itself helps with lactation!.

Now coming to your query, I don't think you are after such a recipe!. I would use it in making any Indian curry along with fresh ginger in equal amounts!. For example use equal amounts in making Aloo Gobhi (Potato and Cauliflower) curry!. It will still render its unique bright yellow color!. You don't have to use dried Turmeric then!.
You can also use fresh turmeric in making Chutney!. But no Chai, sorry!Www@FoodAQ@Com

You can use it in place of turmeric powder, peeling the root and mashing it in a pestle and mortar or in a food processor, then adding it to the rest of your curry spices!. It's much more intense than turmeric powder, so don't overdo it!.

It can be used in drinks, boiling it with milk and a little sugar is an old wives remedy for sore throats and the initial symptoms of a cold!. Www@FoodAQ@Com

use it to season spicy food!. if your cooking some exotic food, use it for flavor as well as coloring, such as paella!.

In the Asian cooking, I use it a lot in the traditional cooking!. You probably never taste South East Asia cooking!. If you have, look for Thai recipes!. Www@FoodAQ@Com
