Question: Can anyone give me a god recipe for arroz guisado!?
I fell in love with this dish when i went to Puerto Rico!.!.!.I need full description of how to make it down to the measurements(in us measurements please)!.Www@FoodAQ@Com

Arroz con Guandules:
Ingredients

1 lb!. raw medium or long grain rice
1 15 oz!. can gandules (pigeon peas)
2 1/2 tbsp!. sofrito*
2 envelopes sazón seasoning with achiote
2 tbsp!. Manzanilla olives
1 1/2 tsp!. capers
1/2 cup vegetable oil
1 8 oz!. can tomato sauce
1 envelope onion soup* (my secret)
16 oz!. water

Directions
Place the vegetable oil, sofrito, sazón with achiote, gandules, olives, capers, onion soup and tomato sauce in a big pot!.

Thoroughly wash rice and add to the other ingredients!.

Pour water over the ingredients and stir well!.
(Water should be about 1 inch above the ingredients)!.

Boil on medium high until all the water is absorbed!.

Reduce heat to low and cover the pot with aluminum foil* and lid!.

Cook for 35-40 minutes, depending on your stove!.

Serve with pasteles or tostones!.

Tips
If you use onion soup, it will give your rice a better flavor and there is no need to use salt!.

Rule of thumb: Add 1 1/4 tbsp!. of sofrito for every cup of rice you are cooking!.

Placing aluminum foil over the pot of rice!. It gives the grains a chance to all pop evenly!.

A-1 ounce salt pork
2 ounces lean cured ham

Washed and diced

B-3 tbsp lard or vegetable oil
The following ingredients should be ground or finely chopped!.!.!.
1 green pepper, seeded
3 sweet chili peppers, seeded
1 clove garlic, peeled
6 fresh culantro leaves
1 onion, peeled

C-2 tbsp tomato sauce
6 olives, stuffed with pimientos
2 tsp capers
2 tsp salt (amount varies according to basic ingredients used in preparing the stewed rice)

D-Basic ingredient (such as: cooked or canned shrimps, cuttlefish, Vienna sausages, beans, corn, etc!.)

E-2 1/4 cups rice, thoroughly washed and drained
2 1/4 cups boiling water (use 3 1/4 cups water for long grain rice)

In a caldero, or heavy kettle, brown rapidly salt pork and ham!. Add ingredients included in B and saute over low heat for 10 minutes, stirring occasionally!.
Add ingredients included in C and mix!.
Add basic ingredient and mix!. Add rice to kettle!. Saute for 2 or 3 minutes!.
Add boiling water, mix and cook over moderate heat until rice is dry!.
Turn rice over with a fork from bottom to top, cover and cook for 30 minutes at low heat!. Halfway during this cooking period, turn rice over again!.
