I am a former chef and traditional Ethiopian coffee is made for each pot, they have special pans to roast the coffee in and make it fresh, I have a friend would runs an Ethiopian restaurant, and like the Japanese Tea Ceremony, it is structured and time honoured way of making and brewing coffee, not made up and sits, in Ethiopia he told me as here it is ordered and they bring you things to eat while waiting!.

As for the bean they are special to, mountain grown and are shipped "green", unroasted, they then hand roast them, them pound or grind, and make it in a special coffee pot, I have seen it done here in Toronto in heated sand, then it is serve with one sugar and popcorn to munch on, the coffee stores use a type of bean from Ethiopia there are 3 main types, and all are of the most ancient of species!.Www@FoodAQ@Com

I work for Starbucks, and there is no distinctiveness about the beans other than there quality!. Ethiopian coffee is typically a bold spicy Coffee with earthy flavors and if I can recall a bit acidic!. It pairs well with chocolate I believe!.Www@FoodAQ@Com

It's especially strong!. they brew it the traditional method--less water, more beans!.

Its a very bold coffee from that region, meaning less caffeine more harsh bold taste!. also taste very 'earthy' like dirt!.Www@FoodAQ@Com
