Yum! Indian food is great - you have plenty of good options!. I find a more "plain" pakoda really goes well with people who may not necessarily like Indian food!. Plus, it's simple!
Here's the recipe:
Ingredients:
2 cups rice flour
1 onion chopped
Curry leaves chopped
4-5 spoons cumin seeds
Coriander leaves chopped
10 green chilies chopped
Pinch of salt
Oil for deep fry
Directions
Mix rice flour with chopped onions, chilis, curry leaves, coriander leaves, cumin seeds and salt!.
Add water (enough to be a paste)!.
Make small balls out of paste and fry in the oil until brown!.
Serve hot with tomato sauce!.
If you REALLY don't want to put too much work into it, just bring a fancy salsa and chips, that works!
Tropical Mango and Macademia Salsa with Tomatoes and Lime (mild)
Ingredients
4 tomatoes
1/4-1/2 fresh mild chilli
1-2 spring onions/scallions
2 tbsps mint
1 tbsp coriander (cilantro)
Juice of 1 lime
3 tbsps olive oil
75g/3oz macademia nuts
1 ripe mango
Pinch of sugar
Salt, pepper, cayenne papper to taste
Directions
Dice the tomatoes and chilli, chop the mint, coriander and spring onions/scallions!.
Peel and dice the mango!.
Coarsely chop the macademia nuts, then toast them lightly in an ungreased frying pan!.
Combine the tomatoes with the chilli, onion, mint, coriander, lime juice and olive oil!.
Add the macademia nuts, then the mango!.
Season with the sugar, salt, pepper and cayenne pepper to taste
Yum! Good luck, you will do great!

I'm Pakistani and we eat very similar food to indians!. Most Indian restaurants are run by Pakistani's, according to a report by the BBC!. So, I'd recommend:
Chutney and Samosas
Onion bhaji's (Pakistani's call them 'pakoras' and indians call them 'bhaji's)
Masala dosas (This is an indian snack)
Kebabs (Mince meat patties Pakistani's eat!. Fried!. Very easy to make)
with chutney
Chaat (Spicy Pakistani chickpea 'salad' but it's very filling)Www@FoodAQ@Com
