Simple & cheap is good as I'm not a chef but I am on a budget, (no filet mignon w/the beans :o)

Answers:
Red Beans and Rice

1 quart (4 cups) dried red beans
2 quarts water
1 pound ham or salt pork
1 carrot, chopped
1 large onion, chopped
1 bay leaf
pepper, to taste
salt, to taste
White or Wild Rice

Soak the beans overnight in cold water; drain!. Heat the beans in about 2 quarts of water, add all ingredients except salt, and boil for at least 2 hours!. When beans are tender, mash them up a bit!. Serve on white boiled rice (or with wild rice) with meat and vegetables on top!.
Serves 10 to 12

BBQ Chicken and Black Bean Burritos
? 1 (15 ounce) can black beans
? 1 tsp olive oil
? ? tsp garlic powder
? ? tsp coriander

? 12 ounces chicken (white or dark meat)
? 1 Medium onion, chopped
? 1 tablespoon olive oil
? 6 ounces BBQ sauce
? 8 ounces pepper Jack cheese, shredded, divided
? 6 10 inch flour tortillas
Drain and rinse beans!. Heat beans with garlic and coriander in olive oil, set aside!.
Boil or bake chicken (if not already cooked) until no longer pink, about 15 minutes!. Let cool, then shred with fingers!. Heat olive oil in sauté pan, add onion and cook approximately 5 minutes until translucent!. Add Shredded chicken and BBQ sauce, stir fry until well blended!.
Divide beans and chicken mixture evenly across 6 tortillas, top each with some of the cheese (use approx 4 ounces), and roll into burritos!. Place in baking dish spray lightly with PAM (helps keep burritos from drying out)!.
Heat in 350 degree oven for 10 – 15 minutes, 20 minutes if refrigerated!. Sprinkle remaining cheese on top and heat another 5 minutes!.


Black Bean Soup
(Start 2 days before intending to eat


1# dry black beans

Soak overnight, rinse and drain several times

In the morning add:

Water to barely cover beans
1# diced ham
3 celery stalks, chopped
2 chopped carrots
2 large white onions, chopped
2 cups white wine
1 green pepper, seeded and chopped
2 cloves garlic, minced
2 heavy dashes Worcestershire sauce
Tsp cumin
Tsp coriander
Tsp crushed red pepper flakes


Bring to boil, simmer covered all day, refrigerate overnight, simmer covered all next day!. Monitor consistency, thick is desired!. Add water if needed!.

Taco Soup:

Ingredients:
1 lb!. hamburger (I used turkey burger)
1 Large onion (minced)
Minced Garlic (however much you like!)
1 package taco seasoning
1 package Hidden Valley Ranch mix
2 Cans kidney beans
1 can pinto beans
1 can black beans
1 can Rotel
1 LARGE can diced tomatoes
2 cans corn

Directions:
Put a liberal amount of olive oil in skillet and sautee onions & minced garlic!.
Add meat to skillet and cook until no longer pink!.
Dump the meat/onion mixture into the crockpot!.
Add package of taco & ranch seasoning!.
Rinse and drain the pinto, black, and kidney beans and add to crockpot!.
Dump the Rotel, Corn, and diced tomatoes into crockpot with all their juices!.

Cook on low in crockpot 7-10 hours!.

Top with cheese, crackers, or fritos!.

My absolute favorite recipe with beans is one that my boyfriend makes!!!!

Bean Salad

Ingredients:
1 (12 to 15 oz) can dark kidney beans
1 (12 to 15 oz) can garbanzo beans (aka Chickpeas)
1 (12 oz or less) can corn
1 healthy bunch of cilantro, chopped
3/4 cup your favorite vinaigrette-type salad dressing (vinegar/oil, lime vinaigrette)

Directions:
Drain/rinse all beans/corn, add cilantro and dressing and mix!. Chill for 24 hours to allow the flavors to meld!.

Black Bean and Corn Salad

Ingredients:
1/2 cup balsamic vinaigrette salad dressing (I use lime vinaigrette)
1/4 teaspoon seasoned pepper
1/4 teaspoon dried cilantro
1/8 teaspoon ground cayenne pepper
1/4 teaspoon ground cumin
2 (15 ounce) cans black beans, rinsed and drained
2 (15 ounce) cans whole kernel corn, drained (you can also use a bag of frozen corn)
1/2 cup chopped onion (I use red onion)
1/2 cup chopped green onions
1/2 cup red bell pepper, chopped

Directions:
In a small bowl, mix together vinaigrette, seasoned pepper, cilantro, cayenne pepper, and cumin!. Set dressing aside!.
In a large bowl, stir together beans, corn, onion, green onions, and red bell pepper!. Toss with dressing!. Cover, and refrigerate overnight!. Toss again before serving!.

Green Bean and Pea Salad

Ingredients:
1 (16 ounce) package frozen peas, thawed
3 cups frozen French-style green beans, thawed
1 cup chopped celery
1/2 cup chopped green pepper
1/3 cup finely chopped onion
1/4 cup diced pimientos
3/4 cup sugar
1/3 cup cider vinegar
2 tablespoons water
1/2 teaspoon salt

Directions:
In a large bowl, combine the first six ingredients!. In a small bowl, combine the sugar, vinegar, water and salt; stir until sugar is dissolved!. Pour over vegetables; toss to coat!. Refrigerate for 3-4 hours!. Serve with a slotted spoon!.

Navy Bean Soup

Ingredients:
2 cups navy beans
3 quarts cold water
1 ham bone (meaty, or small shank end of ham)
1 medium onion, minced
1/2 teaspoon sugar
2 celery stalks, diced
milk or water
salt and black pepper

Directions:
Quick-cooking dried beans do not REQUIRE overnight soaking!. Some people however, believe even those are better for soaking!.Others prefer the old-fashioned type!.

If you prefer to soak beans, measure the amount of water specified in this recipe and leave beans in it overnight!. Next morning, add the remaining ingredients!. No draining is necessary!. 2 cups beans = 1 lb!. Place beans and water in kettle with ham bone!. Add onion, sugar and celery!. Bring slowly to boiling point!. Cover and simmer 4 to 5 hours until beans are tender and the liquid partially cooked down!. Remove ham bone!.

For smooth soup, rub through a coarse sieve!. Or mash beans lightly with a potato masher for a chunkier soup!. If you prefer, you may leave beans whole!. Cut ham off bone; add ham to soup!. Season to taste!. Dilute if desired with additional milk or water!. Serve hot!.

Black Bean and Goat Cheese Quesadillas

1 can of black beans rinsed
1/4 c!. salsa
1/4 c!. onion
goat cheese
cilantro

Combine black beans, onion and salsa, heat and mash!. Make quesadillas as your normally would and use black beans, goat cheese and cilantro as the filler!. Enoy! The black bean mixture will keep 3-4 days in the fridge!. Www@FoodAQ@Com

I loove beans!!:) I sautee onions in butter and olive oil then add garlic and seasonings (garlic powder, pepper, Lawrys whatever you like) then I add that too a crock pot when its transcluscent, Then I add a few smoked turkey parts(whatevers on sale: necks,legs,drumsticks whatever) add some water and more seasonings and parsley and a few cloves of raw garlic!. Let that simmer all day and night in the crock pot on low after washing and sorting through the beans!! Deelish!! I use this with northern, pinto, black eye peas!.!.!.and everyone looooves it!@! I like navy and northern cooked in the slow cooker with beef broth and a hamhock or bacon!.

I also really like lentil soup, with beef broth, bacon and rotel!.
