Question: I am looking for an authentic homemade enchilada sauce recipe!?

Saute 1tsp!. minced garlic in two(2) tbsp of oil, then add two(2) tbsp of flour!. Cook for about one(1) minute careful not to burn the flour!. Add two(2) to four(4) tbsp of chili powder stir well!. Now slowly add two(2) cups of chicken broth then add about a quarter(1/4) to half(1/2) tsp!. Cumin power!. Cook until sauce is thicken!. You may need more liquid depending on how thick the sauce you want!. Salt and pepper to taste!. This sauce is very good on scrambled eggs as well!.Www@FoodAQ@Com

ENCHILADA SAUCE

1 can (28 oz!.) enchilada or red chile sauce
1 can water, same as above
1 1/2 c!. of shortening
1 1/2 tsp!. salt
1 tsp!. cuminos (heaping) or ground cumin seed
1/4 tsp!. oregano
1/8 tsp!. pepper
2 c!. flour
1/4 tsp!. garlic powder

In one pan put flour, salt, cuminos, oregano, garlic and pepper!. In separate pan melt shortening until it smokes!. In another pan pour enchilada or red chile sauce and water!. Use medium heat!. Cook until enchilada sauce starts to boil!. When enchilada sauce begins to boil and shortening starts to smoke, pour shortening into flour mixture!. Stir until flour mixture makes a paste!. Add this to enchilada sauce!. Use hand beater (low speed)!. Simmer about 20 minutes longer!. Stir frequently!. Can be frozen for future use!. Will thicken after it sets!. Use a little water to thin to your taste!.

If your sauce comes out brown that's not authentic!.
You need to buy some chili pods!. Then you rinse them very good with hot water!. Then you need to take out all the seeds out!.
In a large pot throw in all the chiles along with warm water!.
Put a head of garlic along with half an onion and 4TB spoons of salt!.
Cook for 40 min
When done put all the chiles in the blender then add some of the water that you cooked it in!.
Blend for about 5 mins you may need to blend more!.
Taste the chile it may need more salt because chile needs alot of flavoring!.

*If you don't use all the chile you can freeze for up to 3 months and just re-heat!.Www@FoodAQ@Com
