What makes fish safe to eat raw (sushi, sashimi)?!


Question: What makes fish safe to eat raw (sushi, sashimi)!?
I already know that there is no actual specification as "sushi grade fish"!. And I have also heard a lot that the fish must be frozen at a certain temperature for a certain amount of time to kill parasites!. But then I hear a lot about the freshness!.!.!. and they usually say you need to freeze it for a few days or a week!.

Does anyone have more information, like maybe a source, for what makes fish safe to eat raw for sushi and sashimi!?Www@FoodAQ@Com

It doesn't matter what fish you buy, it will have already been frozen!. I've never heard of anything special having to happen - I used to work in a restaurant where we got the salmon and tuna delivered fresh from the market and the chef would portion it up and we'd eat the leftover scraps dipped in soy sauce!.!.!.!.!.!.mmmmmm!. We'd also serve the fish rare to med/rare anyway!. It's got to be very fresh!.!.!.!. it's easy to tell if you know what you're looking at!. I wouldn't eat supermarket fish raw!. Even at some fish markets they tend to send the best stuff to the restaurants and the day or two old stuff to the public!. Apart from that advice I can't really help!.Www@FoodAQ@Com

Before u eat sushi!.!.!.you have to go in an authentic japanese sushi bar!. They served the best sushi which means that its fresh!. You dont freeze sushi, if you do then its not fresh anymore!. Coz once you thawed them, its gonna be soggy!. I suggest you go to your local market and get some good grade fish!. Served it within the day!.Www@FoodAQ@Com
