Answers:
You can't use cheddar cheese for a number of reasons!. Its too salty, its too hard, it melts!.!.!.

The only other alternatives are soft cheese or Ricotta cheese, but if you are going to go out and get those cheeses, you might as well get mascarpone!. Its not difficult to find, most good supermarkets should sell it!.Www@FoodAQ@Com

Sorry to break everybody's bubble but there is no substitute for marscapone cheese!. Cream cheese with sour cream called Creme Fraiche seems close but not the same!. If you've never had the real thing you would not know the difference!. Go with the Creme Fraiche [Fresh]!. Lots of recipes is you Google it!.Www@FoodAQ@Com

A good substitute for marscapone is a mix of cream cheese, sour cream, and heavy cream!. Cheddar cheese would not be good in tiramisu!.Www@FoodAQ@Com

you can use sour cream and cream cheese!.
equal parts with a tiny bit of sugar!.
enjoy!Www@FoodAQ@Com
