You can find several good ones via the VahChef on YouTube (going to his own site to get specific ingredients and amounts as needed though I find his site to be a bit confusing to navigate and I'm usually good at finding my way around the net -- the other thing that is difficult is knowing the terms for some of the ingredients which often just need an English translation but wiki is great help there):

He has about 230 how-to videos and I'd say at least half are vegetarian with maybe a third or more vegan or easily convertible!. His videos are very helpful in getting comfortable with Indian food and he's fun to watch!.Www@FoodAQ@Com
If you want superb food good enough for entertaining then look at the curry kits on the source below!. Veggie/vegan ones include aloo gobi, chick pea curry, bombay potatoes, tarka daal and pilau rice!. Most are £1!.99 a kit and give far superior results to cook-in-sauces!.
My husband is veggie and all 22 of the kits are veggie - being only spices, so you can also do what he does and substitute tofu or veggie mince for the meat in some of the others!. Aloo mattar (Potatoes and Peas)
Ingredients
Butter
Onions
Garlic
Ginger
Chillies
Haldi (tumeric)
Garam Massala
Chilli Powder
Salt
Tomatoes - tinned or fresh
Potatoes - cut into chunks
Frozen Peas
Method:
Theres no measurements with this - I tend to put a lot of garlic, ginger and chilli in it - but its up to you
Melt large knob of butter in a pan and brown the onions - brown them slowly and make sure they are brown and not translucent!.
Add chopped garlic, ginger and chillies and cook for about 5-10 mins!.
Add haldi about 2-3 tsp stir and cook for another couple of mins
Add tomatoes - small or large tin depending on how many your cooking for
Cook for a further 10 mins
add chilli powder (if wanted its optional) potatoes and salt, stir and add boiling water to cover potatoes
add peas
add 2 - 3 tsp of garam massala
Put on lid and low gas and cook until potatoes are tender!.
