Question: How to make the flaky/crunchy crust of Pattes!?

I am a former chef from Canada and have worked in Jamaica, plus we have many Caribbean people here in Toronto Canada were I live, and flaky is fine, but crunch/crisp pattie crust is not common, it is a regular dough made with margarine or shortening, a bit of turmeric is added for colour, and they are baked, you could fry them for crispier crust, but that is not traditional, I make my filling the day before along with the dough, and I roll mine out on my pasta machine in sheets!. but if you do not have one, do them one at a time!. Just make sure to poke a hole in to allow the steam to escape or they will be soggy!.Www@FoodAQ@Com

Do you mean patties!? If so, fry them in oil at a fairly high heat!. Rolling them in sesame seeds helps with the crunchiness!. Www@FoodAQ@Com
