Help with making curry chicken?!


Question: Help with making curry chicken!?
I tried to make curry chicken the other night and it called for 3tbsp of curry and other misc!. spices!. The chicken smelled great, but it did not taste as flavorful as the curry chicken that I have had at Indian restaurants!. Does anyone have suggestions to make the chicken have a more authentic Indian food flavor!?Www@FoodAQ@Com

You need to use good spices!. And don't be shy with them, Here is my recipe for curry chicken I got from an Indian website!. It's excellent!.

Indian Curry Chicken

Ingredients
3 tablespoons tomato sauce
3 tablespoons plain yogurt
1 cup water
1 inch cube of ginger
2 tablespoons water
4 cloves garlic
1 cut-up, skinned chicken
2 bay leaves
3 tablespoons oil
1 cinnamon stick
5 cardamom pods (green if you can find them)
5 whole cloves
1 teaspoon hot pepper flakes
1 teaspoon turmeric
1 teaspoon salt
1/8 teaspoon pepper
1 tablespoons lemon juice

Directions

Mix the tomato sauce, yogurt and water and set aside!.
Blend the garlic, ginger and water until smooth!. Brown the chicken pieces in the oil Remove the chicken from skillet and lower heat!.
Add the cinnamon stick, bay leaves, cardamom pods, cloves and hot pepper flakes!. Stir for 30 seconds!.
Add the garlic and ginger paste and the turmeric!.
Stir for 1 minute!. Add tomato mixture, salt, pepper and lemon juice!. Stir!.
Add chicken, cover and simmer for 30 minutes, turning chicken a few times!. Serve with plain rice!.

You need to use a good curry powder or paste - or even better find a recipe that asks for the individual spices!. Make sure that your spices are fresh, as stale spices will not have as much flavour!.

You also need to cook out the spices!. Cook your onions till golden, add the garlic, ginger and chili,cook a little longer then add the spices and fry until you get a strong aroma - just don't let them burn :) When the spices are fried, add your chicken and liquid (tomatoes, stock etc)!. Cook over a low flame for a long time - curry takes a while to really get it's flavour!.

You could also try adding fresh corriander at the end of the cooking, this will liven up the dish!. Www@FoodAQ@Com

You have to fried slice onion until soft and light brown, add meat curry powder and fried another one minute, add milk/cream/yogurt some water let it boiled add chicken, salt to test!. if you like you can add wedged tomato, and wedged onion!. Make sure you use Indian curry powder for meat/chicken not fish curry, or you can use ready mix chicken curry paste which you can buy from international store!. Good luckWww@FoodAQ@Com

The best Indian curries call for "Garamasala " a spice blend, find it in ethnic store, add cumin and some curry powder, you have to cook the spices in the sauce for a long time (think pasta sauce) and it is better the next day!.Make a paste with the spices and experiment till you find the right blend that you like!.Www@FoodAQ@Com
