Technically, steamed will always be better than fried!.
However, if they're cooked properly, there's shouldn't be much difference!. You should always steam a dumpling before frying it and transfer from the steamer straight into hot fat!.
By steaming, the pastry becomes saturated with water!. By frying at a high temperature, the water in the pastry is evaporated into steam and as long as the dumpling is removed from the fat before all the water has gone, it shouldn't have absorbed much fat at all!.
They're often not cooked properly because it should be transferred from the steamer straight into a hot wok to get the steam generating immediately!. if they're put aside for even 30 secs, they cool too much, also if the fat isn't hot enough the fat starts absorbing before the steam is generated!.
If the dumpling is big, the problem with steaming is that it takes a long time and the pastry falls to bits, it gets too soggy!. Hence you steam the pastry to cook and then fry at a high temperature to make sure the centre of the filling is cooked!.

Any food is healthy when you use it as fuel for your body, and you use burn "fuel" for energy!.!.!.anyways frying them will give you more calories, but using a mixed oil, canola oil, or even peanut oil will give you alot of essential fats that will benefit you!.
For me steaming them gives a softer texture and i prefer the crispy texture of the fried dumplings!.

Steamed is healthier, but fried taste better!. To fry dumplings you Boil them in water like any pasta!. When done remove from water and refrigerate, preferable overnight or at least for 3 hours!. Fried dumplings are known as Pot Stickers!. When ready to fry use a well oiled non-stick pan!. Chilling them for several hours prevents them from sticking t the pan and they stay firm!.
