Question: Lebanese spices for beef!?
Hi!. I wanted to try cooking something new!. I have a friend that owns a Lebanese restaurant so I called him for some advice!. He mumbles a lot & I didn't want to ask him to repeat it for the 3rd time but I completely missed the spices for the beef kabobs!. I think I can do the hummus, falafel, saffron rice, and babaganush!. I just have no idea what he said about the beef kabobs!. Any idea of how to marinate or what spices I need!?Www@FoodAQ@Com

Throughout the Middle East they use a lot of the same spices I will give you a lamb kebab recipe that is and marinade you can also use beef instead of lamb is a great recipe specially cooked on the barbecue!.
Lamb Kabobs Marinaded "Great"
4 pounds leg lamb or beef sirloin
2 tablespoons minced garlic (4 to 5 cloves)
2 tablespoons minced fresh rosemary leaves
4 teaspoons minced fresh thyme leaves
1/2 cup mild olive oil
1/2 cup dry white wine
4 tablespoons red wine vinegar or lemon juice or 2 n' 2 of each
1/2 Tablespoon!. Kosher salt
2 medium!. white onions cut 2" cubes
3 medium!. Grn, ylw, ong!. bell peppers cut 2" cubes
1 pounds!. mushrooms whole
2 pints cherry tomatoes
1/2 cup tomato sauce
1/2 teaspoon freshly ground blackpepper
20 Wooden skewers

Cut the lamb in 1 1/2-inch cubes!. You should have about 40 cubes!. Combine the garlic, rosemary, thyme, red wine, vinegar,olive oil, and lemon juice and 1 teaspoon of salt in a medium bowl!. Add the lamb cubes, cover with plastic wrap, marinate and refrigerate overnight or for up to 2 days!. Toss occasionally!.
Heat a charcoal grill with coals!. Spread the coals in 1 tight layer on the grill!. Cut the White onions in quarters and separate each quarter into 3 or 4 sections!. Loosely thread 3 or 4 pieces of lamb alternately with sections of onion on skewers!.
The same with bell pepper and mushrooms!. Sprinkle both sides of the lamb with salt and pepper!. Next place 4 or 5 cherry tomatoes on skewers, threading them through the stem of the tomato!. Rub the tomatoes with olive oil and sprinkle with salt and pepper!. First, place the lamb skewers on the hot grill and cook for 10 to 15 minutes, turning 2 or 3 times, until the lamb is medium rare!. Approximately 5 minutes before the lamb is done, place the tomato skewers on the grill, turning once, until seared on the outside but still firm inside!.

* 1/2 cup olive oil
* 4 cloves garlic, peeled and crushed
* 1 teaspoon ground cumin
* 1 teaspoon ground coriander
* 1 teaspoon salt
* 1/2 teaspoon pepper
* 2 pounds lamb or beef, cut into 2 inch cubes (*)
* 4 onions, peeled and quartered
* 2 green peppers, seeded and cut into 2 inch squares

In a large bowl, combine oil, garlic, and spices and mix well!. Add meat to this marinade and stir until well coated!. Refrigerate for at least 2 hours or overnight!. If using wooden skewers, soak them in water for at least 30 minutes before using!.
