8 ounces soba noodles
2 scallions, sliced
2 teaspoons sesame oil
2 teaspoons reduced-sodium soy sauce
2 teaspoons toasted sesame seeds


Cook noodles according to package directions!. Drain the noodles in a colander and rinse under cold running water until cool!. Transfer to a medium bowl and toss with scallions, oil, soy sauce and sesame seeds!.

I am a former chef from Canada and I worked for a short time in Japan in the 1980's, a nice noodle dish either warm or chilled is made with a buckwheat noodle called "Soba", you can generally find them in most grocery stores in the international aisle or an Asian store that sell a wide range of foods from Asia, they are small and thin, some are wider like spaghetti, just cooked them up, and serve with sauteed veg, soya sauce and sesame oil for nice main or pasta course, they can be dressed and serve chilled, a Japanese favourite in the summer!.

Other noodle like ramen and Udon both wheat based can be used in place of the Soba, you can make soups or other dishes with them even a stir fry with them in or pour the veggies on top, if you like tofu you can make a mock tonkatsu, normally made with a breaded pork cutlet you can make it with a slice of tofu done the same way and you place it over a bed of rice and under the tofu a stir fried cabbage with garlic and ginger, and add a dash of soya sauce to serve it with!.Www@FoodAQ@Com

Stir Fry
1 block firm Tofu, optional
Several carrots, sliced thin
Broccoli florets
1 can sliced water chestnuts, drained
Other desired vegetables
Noodles or rice

There are several ways to prepare tofu!. Usually I slice it and then marinate it in this sauce:
1/2 cup chicken (or vegetable) broth
2 tablespoons soy sauce
1 tablespoon teriyaki sauce
1 teaspoon sugar
sometimes I put in 1 drop of sesame oil, it has a very strong flavor
You can make little cubes or tofu steaks 2x4"!. Usually I pan fry these with a little bit of the marinade until golden brown!.

Stir fry the vegetables in a little bit of oil until done, it only takes a few minutes!. Then add the tofu back in if it's in chunks!. Or you will set the tofu steaks on top of the rice and vegetables!. Pour a little of the marinade on top so that everything will soak up the sauce!. You can also use a premade sauce from the store, but I don't find them authentic!. Serve over cooked rice or noodles!.

Sukiyaki
You will need a big wok with a lid for this
1/2-1 lb beef sliced very thin into strips and marinated in teriyaki (if no meat, skip this but that is how it is traditionally made or you can use tofu)
2 potatoes, peeled and diced
3 carrots, peeled and sliced
1 onion, sliced thin
at least 1 egg per person, up to 6
Rice noodles or steamed rice

Sauce:
1 cup chicken (or vegetable) broth
1/4 cup soy sauce
1-2 tablespoons sugar

Put the broth in the wok over medium-high heat!. Add the meat and vegetables, putting them in their own section of the pan!. Leave a section for the eggs!. Bring the broth almost to a boil!. Crack the eggs and drop them into the broth so that they will poach!. You do not want them to break or mix!. Turn the heat to low and cover for 1 hour!. You can add rice noodles to the pot 10 minutes before it's done (as per instructions for boiling) or serve it over steamed rice, which is what my family always did!. This is a really traditional home cooking meal!.

Yakitori
2 chicken breasts (try using tofu or chik'n pieces)
1 tablespoon sugar
2 tablespoons sake (my mother always skipped this)
3 tablespoons mirin
3 tablespoons soy sauce
Bamboo skewers (soaked in water to prevent burning)

Cut the chicken breasts into bit size pieces and place them on the skewers very closely, but not smashed together, you want the sauce to be able to get in between!. Mix the rest of the ingredients together in a glass with a fork!. Apply the sauce with a brush to the chicken!. Either grill or place on a grilling rack in a toaster oven at about 400 until done (probably 10-15 minutes for chicken, less for tofu), rotating them once during cooking!.Www@FoodAQ@Com

Imperial veggie ramen

You will need:
- 1 package of ramen noodles
- 1/2 cup of scallions (sliced)
- 1/2 cup of bamboo shoots
- 1/2 cup of green peppers (sliced)
- 2 or 3 Shiitake mushrooms
- 1 egg
- Dried Kelp
- 6 cups of water

The soup broth (Dashi):
If you want to make your own soup broth, it's pretty easy and any of the following will mix perfectly with this recipe:
- Shiitake (mushrooms)
- Kombu (Dried kelp)
- Niboshi (Dried sardines)

How to cook:
(Let's say you choose the Shiitake mushrooms soup broth)

* You will need: 1/2 cup of shiitake mushrooms

1!. Soak the Shiitake mushrooms in water for 30 minutes!.

2!. Put the Shiitake and water in a cooking pot!.

3!. Heat it (Medium heat)!.

4!. Turn off the heat when the water comes to a boil!.

5!. Let it stand for 30 minutes!.

6!. Remove the Shiitake mushrooms with a strainer!.

The noodles:
7!. Put 2 cups of water in a cooking pot and bring to a boil!.

8!. Once the water is boiling add your ramen noodles!.

9!. Wait 2-3 minutes until the noodles are tender and separated!.

10!. Take off the water with the strainer!.

The recipe:
11!. Put the egg in a cooking pot, covering it with 1-2 inches of water!.

12!. Bring to a boil!. As soon as the water boils, turn off the heat!. Let it sit for 10 minutes, then peel it!. Cut the egg in half lengthwise!.

13!. Add the ramen noodles in your soup broth!.

14!. Add the green peppers, the shiitake mushrooms, the bamboo shoots, the scallions, the dried kelp and the egg!.

15!. Enjoy!
