Did the Chinese make a pact amongst themselves to never give out the real recipe for Fried Rice?!
Seriously, it makes me wonder!. I've tried a lot of "fried rice" recipes from cookbooks, tv, youtube, magazines!. Nothing comes close to the fried rice I'm served at fast food/authentic Chinese Restaurants!. I mean, you have the key ingredients: rice, egg, vegetables, chicken/shrimp/pork, spring/green onions, but there's always something missing!. It never tastes the same as the ones they serve in restaurants!. Is it a Chinese secret!? =PWww@FoodAQ@Com

Seriously though, try using Chinese bbq pork (Char Siu) and Chinese sausage as your meat!. also, use a combination of soy sauce, oyster sauce, and sesame oil to flavor the dish as you're cooking!. also, as mentioned earlier, use short grain rice and cook it a day ahead to let the rice "dry" out a little!. It will turn out better than restaurant fried rice!. Www@FoodAQ@Com

There is NO SUCH THING AS A "real recipe" for fried rice!.
You can make fried rice however you want!. The ones you get in the restaurant are very basic and have ingredients put in to show that the rice have been fried and with a little bit of colour (eg peas and carrots and ham)!.
You can put whatever takes your fancy in it according to taste!.
One hint for successful fried rice - cook the rice the day before to let it dried out a little!. also!.!. use fish sauce instead of salt!.

The secret is the heat from the wok!.!.!. The wok in the Chinese restaurants have high BTU burners when running sounds like a jet engine!. Woks get really hot and produce foods with a flavor that's called "wok hei" where the food is smoked and cooked at the same time!.
