What is the difference between light soy sauce, dark soy sauce and regular soy sauce?!


Question: What is the difference between light soy sauce, dark soy sauce and regular soy sauce!?

regular soy sauce - all-purpose, can be use for cooking, marinade, dipping sauce!.
Dark and Light "color" soy sauce - primarily for cooking, marinade, not suitable for dipping!. the main purpose of dark and light was for the food coloring, some dish requires soy but don't need the dark color, such as stir fry, some dish requires a golden brown dark color such as some meat stew dish, that's when dark soy come in handy!.
popular misconception that "light" soy contains less salt, it is untrue, actually most light soy contains more salt, just the color is light!.

'Regular Soy Sauce' is the same as 'Light Soy Sauce'

Light Soy sauce is more liquid than dark soy, and has more salt!. Dark soy has a more malty taste to it, and more of the 'umami' flavour that can also be found in meat, mushrooms, cheese etc!. Dark soy is used to enrich the colour of foods as well as to flavour it, but is less salty than light soy, so the two are often used together!.

As for cost - they are usually around the same price!. If you are buying from a supermarket it is likely you will only be able to get the light version!. The way to test if the bottle contains light or dark soy is to shake it slightly and then look through the bottle to see how long it takes the glass to become clear again (dark soy will take longer because its thicker)!.Www@FoodAQ@Com
