Chinese dumplings ingredients?!
Does anyone know the types of meat used in Chinese dumplings!? Is it the same as in wonton soup noodles!? And don't say "dog" or "cat," that's just rude!. Www@FoodAQ@Com

in the dumplings (jiao zi, or the dumplings that have the frilly folded tops), the usual types of meat used is pork and beef!. down in the southern regions of china(guangdong province) , pork is mainly used!.!.!. along with chinese cabbage/garlic chives and shitake mushrooms (note that ginger shouldnt be used with pork)!. pork is used because clean flavours are suited to the southern regions!. but in the north, beef is used because it suits the more spicy and warm tasting foods there!. ginger is the main flavouring used in these beef dumplings!.
if you are talking about wontons in soup, they always use pork, and usually shrimps in them too!. shitake mushrooms are sometimes used!.
the main concern with chinese dumplings, is that westerners are unable to flavour the fillings properly, thus creating a flavour that is not traditionally chinese!. make sure chicken is never used, and carrots!. flavourings that shouldnt be used are garlic cloves, fish sauce, oyster sauce, alcohol or cooking wine, sesame oil, chilli sauce, pepper powder!. its just a matter of keeping the 'sweet' taste of the meat without flooding it with random flavours!.
