Answers:
I am African American and I ate korean food for the first time a few weeks ago!. I had the Kalbi/ Galbi (korean barbeque ribs basically), and it was delicious!. In fact, I hope to eat more this weekend! Lol

I also enjoy the kimpab! (Basically rice with vegetables and beef wrapped in seaweed!.)

Those are pretty generic Korean foods and I have heard many people say they like Korean barebeque!.

You could also just let him pick something that looks good or which has tasty ingredients!. For example, I really like cucumbers, so when I eat at a sushi restaurant, I will normally try to get something that has cucumbers in it!. Or something that sounds interesting (like the White Dragon or Rainbow rolls)!.

So give it a try! I am sure he will enjoy the experience and appreciate you trying to broaden his palette!. :)

Here are some items I might suggest because they all have ingredients that he will be familiar with (versus octupus, eel, entrals etc!.)
He sounds too picky for Kim Chi, but maybe he will give it a shot!

Beef!.
Galbi-gui (Broiled Short Ribs)
Ansihm-gui (Grilled Tenderloin)
Sogogi-jeongol (Beef and Vegetable Stew)

Chicken
Dak-gui (Grilled Chicken)
Samgye-tang (Ginseng Chicken Soup)

Seafood
Saengseon-gui (Grilled Fish)
Maeun-tang (Hot Spicy Fish Soup)

Vegetables
Beoseot Bokkeum (Sauteed Mushroom Salad)
Gaji Namul (Steamed or Fried Eggplant)
Hobak Namul (Pan Fried or Braised Squash)
Bibimbap (Mixed Vegetables on Rice)
Dolsot Bibimbap (Sizzling Vegetables on Rice)

Noodles and Rice
Makguksu (Buckwheat Noodles in Chicken Broth)
Bokgeumbap (Fried Rice)
Japchae (Vegetables with Transparent Noodles)
Ogokbap (Five-Grain Rice)

Soup
Oinaeng-guk (Chilled Cucumber Soup)
Mandu-guk (Dumpling Soup)

Street Foods
(If he is feeling like it)
Mandu (Dumplings)
Tteokbokki (Stir Fried Rice Cake)
Sundae (Korean Sausage)

Have fun!

Mongolian Beef and Rice

2 teaspoons sugar
2 teaspoons peanut oil for stir frying
4 cups of cooked white rice

Combine soy sauce, cilantro, garlic, hoisin sauce, sesame oil, and sugar!. Whisk until well blended!. Pour marinade over beef, cover and chill for one hour, or overnight!. Heat peanut oil in wok until hot!. Stir fry beef strips for five minutes or until done!. Serve beef with hot, cooked rice!. Tip: Place the steak in freezer for 20 minutes and it will be much easier to slice

If he's an omnivore, definitely order kalbi (Korean short ribs)!. They're not spicy and they don't have any wacky ingredients, but man, are they good!.

In addition to this "safe" entree, I'd definitely encourage him to try the ultimate Korean food- kimchi! Even if he doesn't like it (very likely), at least he can say he tried it!. Everyone really ought to try kimchi once in their lifetime, right!? :)
