Question: Nice mild curry!? i need the recipe please!?
not too long ago i went out to a curry house, and i don't like curry's, but this one was really nice and moreish, it was really very creamy and had orange juice in it and was very, very mild, though unfortunately i cant remember what it is called, any recipes or links to one would be greatly appreciated!.

It's probably a variation of a masala (as in chicken masala)!.

You need to make a basic curry gravy; boil tomatoes and onions and a couple of cloves of garlic for about 10 mins, then blitz with a stick blender!. Add the following:
1 tbsp ground coriander
1 tbsp ground cumin
1 tsp turmeric
1 tsp minced ginger (or dried ginger is fine)
1 tsp garam masala

Mix well and simmer for 20 mins!.

That's your basic curry masala gravy!.

Chances are if it's mild it had either yoghurt or coconut milk in, coconut milk is nicer, if it was sweetish then it's coconut, if it's not then it's probably yoghurt!. !.

also it probably has some chopped coriander leaf in - that adds a nice flavour

Other than that, you can add curry powder (1 tsp), but from there you'd need to experiment with spices

A good cheat is to get some Patak's mild curry paste (or quick curry paste)!. That adds a really nice mild flavour to most curries!. most restaurants would do that, unless it's a really good one they haven't time to mess around adding spices and things and letting them cook properly!.

If you are adventurous, add some tarka - a mix of mustard seeds and brown lentils and spices and onion, fried in oil for a few minutes - they add lots of subtle flavour!.

One key thing to remember about making a curry like you'd get in a restaurant; they probably use a lot more salt than you would think is good for you!. It's fine if it's only an occasional thing, so don't be afraid to taste it and keep adding salt until it's tasty!.Www@FoodAQ@Com

I know this is not the recipe you are looking for, but when I was in the Cook Islands, Paw Paw Salad (Papaya) was at every pot luck during the holidays!. It was so simple and delicious!. It was just chucks of fresh papaya mixed with mayonnaise (and it had to be Best Foods!), fresh squeezed lemon juice, mild curry powder (green), and salt and pepper to taste!. I have never seen a printed recipe, but the mayonnaise just coated the papaya and the rest I would just mix to taste and make sure it is thoroughly chilled before serving!.Www@FoodAQ@Com

It sounds like a korma to me!. Try this recipe -
INGREDIENTS
3 tablespoons olive oil
3 tablespoons butter
2 large onions, chopped
6 tablespoons plain yogurt
2 tablespoons mango chutney
4 cloves garlic, minced
2 teaspoons turmeric powder
1 teaspoon chili powder
2 teaspoons garam masala
2 teaspoons salt
4 boneless skinless chicken breast halves, chopped
1/3 cup sliced almonds

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!. Lightly grease a 2 quart baking dish!.
Heat oil and butter in a skillet over medium heat!. Cook onions in oil until soft!.
Place onion, yogurt, mango chutney, garlic, turmeric, chili powder, garam masala, and into the bowl of a food processor!. Process into a smooth sauce; it should be about the consistency of thick cream!. Add a bit of water or yogurt to thin it if needed!. Spread chicken into prepared baking dish, and pour the onion sauce over the chicken!.
Bake in preheated oven for 30 minutes, or until the chicken is cooked through!. Sprinkle sliced almonds over the top, and serve!.Www@FoodAQ@Com
