There are recipes for cheese crackers/cookies around on the internet!.
But Chinese eat very little dairy of any kind - milk, cheese, cream, yogurt etc!. I saw no dairy cows in China when I was there!. I think it's never been part of the culture!. Perhaps dairy cows weren't adapted to local farming!? Many Chinese find even the smell of dairy unpleasant!.
It is weird though when you think the Mongols made a liquor alcoholic beverage out of mare's milk!. They also have goats - I wonder if they do not milk them!?

Indian cuisine uses a lot of dairy, including cheese!. Most other Asian countries do not!.
The Chinese-American fried appetizer 'crab rangoon' has cream cheese in it, but I don't think that's an authentic dish from China!.

The only Asian food that I know of that has cheese is a roll made in the Philippines that is their own version of ensaimada bread and they top it off with cheese!.Www@FoodAQ@Com
