Could you use another leaf!? Maybe kale, collards, or romaine!? They're all relatively tough and they are dark green!.Www@FoodAQ@Com

you dont have to wrap the rice balls with seaweed!. it's just a preference!. Just sprinkle salt on the outside so rice won't be so bland and stuff it with some tasty filling of your choice!. If you're trying to make it 'look' better u can sprinkle some sesame seeds on the outside but that's also a preference too!.

you can add tamago as a side dish!. (he might not like sugar in it so just use salt)
as for the sausages slice up the top portion of the cocktail sausages so when you pan fry it, it'll spread out like an octopus!.Www@FoodAQ@Com

I would use furikake instead of nori on the outside of the onigiri!. You don't have to get the kind with nori, for example, sake (salmon), gomashio (sesame seeds and salt) or katsuobushi furikake are very popular!. Perhaps if you had a cut-out of your stamp, and then just filled that area with the furikake, then you could get the desired effect!?Www@FoodAQ@Com
