In India for some reason yogurt has Always been called curd, sour curd is when yogurt turns sour a few days after it has been made ,no souring agent is used!.In India most homes make a fresh batch of yogurt every day for table use ,as it is served at meal time!.Left over yogurt is used for various culinary purposes!.
Idli batter needs to ferment to get it's light fluffy texture when steamed,usually the 'dal' paste is sufficient for fermentation in warm climates!.Yeast or sour yogurt,coconut water etc are used to ferment appam batter , a pancake that uses only rice flour & no other fermenting agent!.Www@FoodAQ@Com
