Why does soy sauce needs refrigerated?!

I am with all the other and happen to be a former chef and worked in Singapore and Japan, and I never saw it in the frig there, and they use gallon size tins or bottles, it is a fermented product and that is a recommendation as bacteria and people not using sanitary handling processes and that can contaminate it, will not keep you but is not pleasant to eat, I buy brands like Kikkomann, here in Toronto Canada I have several other Asian ethnic areas, my other fav is Korean soya sauce, like Japanese is lighter and less salty, I also keep dark chinese and what based Tamari to!.Www@FoodAQ@Com
The number of ingredients is irrelevant!. It's whether the product can support bacterial growth!.
Soy sauces with a very high sodium content don't require refrigeration!. The salt concentration prevents bacterial growth!. Many soy sauces contain less salt!. They are still salty, but the concentration isn't high enough to inhibit all bacterial growth!. Those require refrigeration!.
All soy sauce will retain better flavor quality if refrigerated!.Www@FoodAQ@Com

i have 6 different brands and all say refrigerate after use !? ( for quality !?)
actually i have never kept soy sauce in the fridge before , bottled teriyaki -yes because of the sugar content ( so it won't sour ) but never soy,
i think we are all ok not taking up the space ,just keep in cool dark space!.Www@FoodAQ@Com

I don't think restaurants keep it refrigerated so it might be fine not to!. I just do it for good measure!. Perhaps it extends the shelf life!. I even keep my good perfume in the fridge to make it last longer!.Www@FoodAQ@Com

I think it's to protect the manufacturer from frivolous law suits!. I have never kept mine refrigerated, even when I had restaurants!.Www@FoodAQ@Com
