Does anyone eat headcheese?!

Head cheese is made of meat and natural gelatin that is derived from the cooking process of the meat!. sometimes extra gelatin is added!. The meat is usually the tender muscles located on the head of the animal, thus the name head-cheese!. quite often, tongue, heart, and shank meat is included!. It does not as some might suppose, include brains, eyeballs, hair, gristle, or much fat!.
There are not a lot of preservatives in head cheese!. It is very tasty on a sandwich, and serves well on small open-faced sandwiches as an hors d'euvre!.
It is usually available in the better delis where people who appreciate foods with flavor shop!. Bologna, is basically the same thing, with the meat all ground up , more fat, and a crap load of preservatives!.

my mother made our own and it is delicious but as most ethnic foods, as many different recipes for it as there are people who like to eat it!. The German-Russian version is delicious, spicy and not so gelatinous as one would suppose!. Anyway, thats how my mom made it!. Great in a sandwich!. its like pickled pigs feet, either you like it or you don't!. You can't beat old fashioned cooking!.Www@FoodAQ@Com
As a former chef and having had the various types from Europe and the Amish style from the US and here in Canada we have the Mennonite style, and one meat packer does one in a bowl like style, it is a product you either like or not, some what fatty and depending on the maker it can be very firm or just gelatinous, I prefer it serve with dark brown bread, chopped raw onions dredged in vinegar, mustard and horse radish, even just plain on a cracker or toast!. It is certainly not for everyone's palate or lifestyle!.Www@FoodAQ@Com

It's meat and jelly with a touch of vinegar, I like it ,next time that you are at the Deli ask for a taste of it !.
