Answers:
Asadero cheese is what you want!. Part-skim milk versions will work better than whole milk, if available!.Www@FoodAQ@Com

There are 2 kinds of Mexican cheese in the supermarket now, one crumbles and one melts!. It will be marked, crumbles on the top!. Both packages look the same and I don't know the words, just pick "crumbles" or the other!.Www@FoodAQ@Com

In the state of Jalisco, we use a cheese called Cotija, but I don't think you'll find it over there!.

I recommend Manchego Cheese, you can grate it in top!.
also Adobera!.Www@FoodAQ@Com

you can use pepper jack and colby!.!.!. they also make bags of shredded "mexican blend" cheese!.!.!.!.!.Www@FoodAQ@Com

I think you're looking for Asadero cheese!.Www@FoodAQ@Com
