When the weather is cold like this, we eat beans a lot!.Www@FoodAQ@Com

Red bean chili

Soak one pound of beans overnight in a large pot with at least two inches of water over the top of the beans!. If you don't have time to soak overnight, put them in a pot, and cover with water by at least two inches, turn the heat on high, and bring to a boil!. When boiling, turn off the heat, and soak for at least one hour!. Pour off the water, and pick out any ugly beans or debris!. (floaters)!. Refill the pot, at least two inches over the beans, and add 2 tbsp of chili powder, 2 tbsp of ground cumin, 1 tbsp of garlic powder, one medium chopped white or yellow onion, and cook over medium heat for 2 to 3 hours, adding water as needed, to keep beans covered!. Beans are tender when you can blow on a spoon full, and the skins peel away from the pulp at the touch of your breath!. Taste them to be sure!.

You can add ground beef, or any left over meats in your refrigerator, at any time if you want meat!. Add tomato sauce, or canned tomatoes after the beans are tender, and salt and pepper to taste!. Continue cooking another 30 to 45 minutes after last addition!. Chili will always be better the second day, after refrigerating over night!.Www@FoodAQ@Com
