living in a northern state, we don't have a huge hispanic influence, but when i have seen it on TV, it has made me salivate!.!.!. sounds great

I would like to try it!. I used to live in Texas where we have lots of great Mexican food (not just Tex Mex, but great Tex Mex as well)!. My dad LOVES it and has become hooked over the years!. But when I was younger I refused to try it because the idea of eating tripe really grossed me out!. Now I've been living in France for a couple of years, and my palate has changed, and the list of foods I'm willing to eat has definitely expanded!. I'll try pretty much anything now, and I would like to try some good menudo when I return to Texas for a visit!Www@FoodAQ@Com

I have never tried menudo, but love tripe and onions, a french dish I believe!.

Tripe and Onions!.
1 1/2 lb (675g) tripe
2 3/4 cups (21 fl oz) 600 ml milk
1 level tsp salt
1 bay-leaf
1 lb (450g) onions, quartered
For the sauce
2 tbsp (1 oz) 25 g butter
1/4 cup (1 oz) 30 g plain flour (All purpose)
2 tsp chopped parsley
1!. Cut the tripe into 1 1/2 in!. (3!.5cm) squares!. Place it in a large saucepan, cover with cold water and bring to the boil!. Simmer for 5 minutes, then drain!.
2!. Add to the saucepan the milk, salt and bay-leaf and simmer for 1 1/4 hours!.
3!. Add the onions and continue cooking for a further 15 minutes!.
4!. To make the sauce:
5!. Melt the butter in a saucepan, stir in the flour and cook for 1 minute!.
6!. Drain the milk from the tripe and gradually stir it into the pan!. Bring to the boil, stirring until thickened!.
7!. Stir in the parsley and season well with pepper!.
8!. Remove the bay-leaf from the tripe!. Stir the tripe and onions into the sauce and heat through until piping hot!.
9!. Taste and check seasoning!. Turn into a warm serving dish and serve immediately!.
serves 4-6!.

I remember a friend of ours cooking green tripe everyday for their Old English Sheepdogs so I had to look it up:

Green tripe contains the partially digested plant matter the cow had eaten as well as the naturally occurring gastric juices and digestive enzymes!.

Green Tripe is excellent as the sole diet or as an accompianment to dry kibble with a great taste dogs love!



SORRY but to me that is just nasty and I draw the line at that on my plate!
