Question: Having a Greek inspired month:)!?
Lately, I've been obsessed with Greek food!. I am from the Med, but not Greece but did grow up with some of these great foods!. As an adult, I would love to recreat these meals for my family instead of always having to go downtown for awesome greek food!. So Y! Pleas help:) If anyone has any easy greek recipes for a beginner I would love you forever:) I 'm open to all things, and loove garlic, fish, lemons, saganaki, whatever! Thanks to all and have a warm night!! P!.S !. I love dolmades or "w'rat dwali", in my neck of the woods, but usually eat that at my mom's!.!.!.haha!.!.TOO complicated!!Www@FoodAQ@Com

GREEK PASTA

4 skinless, boneless chicken breasts
1/2 cup sliced black olives
1/2 cup red onions, sliced in rounds
1 green pepper, chopped
1 plum tomato, chopped
feta cheese (to your liking)
1 cup favourite Greek oil dressing
spaghetti (cooked)

Cut chicken into chunks and stir fry in olive oil until cooked!. Add olives, red onion, and green pepper; fry until softened!.
Add spaghetti, dressing, feta cheese and tomato!. Stir fry until thoroughly heated and well combined!.

Serve hot!. Serves 4 generously!.

EASY GREEK STROMBOLI

Serves 6, or cut 3/4 inch slices for appetizer!.

20 dinner rolls, thawed and warm
1 (10 oz!.) pkg!. frozen spinach
1 (3 oz!.) pkg!. cream cheese, softened
1/2 c!. cottage cheese
1 egg
4 oz!. crumbled Feta cheese
1/4 tsp!. garlic powder
Sesame seeds
1 beaten egg

Knead rolls together to form a ball!. (Rolls must be warm and bubbly to knead well); use a little flour to prevent sticking!. Roll dough to form a 12 x 18 inch rectangle!. Spread with softened cream cheese leaving a 1/2 inch margin around edges!. Thaw spinach and squeeze out all the liquid by placing between four paper towels!. Sprinkle with 4 ounces of Feta cheese!.
Blend cottage cheese, egg, spinach and garlic powder in blender, spread over cream cheese!. Mark center of rectangle with knife!. Roll the right 18 inch side to the center!. Roll the left 18 inch side to the center!. You will have a double roll!. Turn over double roll and place rolled side down on greased cookie sheet!. Smooth side should face up!. Tuck under ends!. Brush with beaten egg and sprinkle with sesame seeds!. Bake at 375 degrees for 30 to 35 minutes!.

BEST CHICKEN SOUVLAKI

3 boneless skinless chicken breasts
1/4 olive oil
1/4 cup lemon juice
1 tsp!. oregano
Greek salad dressing
lettuce and tomato, in small pieces for salad
feta cheese
pita bread, if desired

Toppings such as black olive, red onion, as desired!. Cut each chicken breast into approximately 5 to 7 strips!. Place in large fry pan!. add olive oil, lemon juice and oregano; stir!. Cook chicken over medium heat until done, browning pieces on the outside to one's taste as liquid evaporates!. Assemble salad of lettuce, tomato and chicken pieces (inside warm pita bread for sandwich)!. Crumble feta cheese over the top!. Add Greek dressing and other toppings as desired!.

Greek salad dressing:

1/4 c!. olive oil
1/2 tsp!. sugar
1/8 tsp!. oregano
1/4 c!. vinegar
1/2 tsp!. salt
1/8 tsp!. dry mustard

Mix and serve!.
