Does anyone like pho?!

I ama former chef and can remember my first bowl back in the 1970's here in Toronto ON Canada and I have also had it in other country's and once in Vietnam, the stock there can be very strong, the use a combo of beef, pork, chicken and sometimes duck!.
It varies from place to place, mainly the same, stock is the key, and good fresh garnishes, I am more partial to the Vietnamese coriander, not as pungent as the regular cilantro, Persian limes, bean sprouts, fresh chili's and the onions again have to be right!. And for me the wider noodles are easier to eat, but the thinner one s are fine, if they use vermicelli then there just being cheap, and the the Vietnamese are not cheap, there portions rival the Chinese places!.Www@FoodAQ@Com

I love pho!. I live in SoCAl, and there are lots of Viet restaurants where I live, but only one place makes it as good as I've always been told it is!. I love getting it with tripe, tendon, some rare beef, and well done brisket!. Some delicious, and then add some Sriracha, cilantro, basil, hoisin, and mung beans!.
