?neg?l Meatballs (?neg?l K?ftesi)
2 lb ground beef (%80 lean, %20 fat)
1/2 cup stale bread ground into crumbs
1/2 cup water
1 tbsp salt
2 heaping tsp baking soda
1-2 tbsp lemon juice
2 medium onions, grated
Put ground beef, bread crumbs, water, and salt in a bowl and knead for 10 minutes!.
-Let it sit in the fridge for 24 hours, i!.e!. forget about it for a whole day!.
-The next morning, mix baking soda and lemon juice in a small cup and pour it over ground meat mix!.
-Add grated onion and m?x well!.
-Cover and put back in the fridge for a couple of more hours!.
-Take walnut-size pieces of ground meat and roll into small balls, and press slightly in between your palms, or give it a fat finger shape!.
-You can either throw them on the grill, or broil them until cooked on one side and then flip them over, or cook them on a non-stick pan on both sides on medium with no oil!.
-Use as many as you need!. The rest can be placed on a flat surface, a plate or a tray--they should not touch each other, and then put in the freezer for a couple of hours!. Once frozen, you can take them off the plate and put in a freezer bag and back in the freezer for future use!.

Stuffed eggplant
6 eggplants
400 gr!. ground meat
1/3 glass rice
2 tablespoons margarine
2 onions
2 tomatoes
1 lemon (juice)
1/2 tablespoon salt
1 bunch parsley
1/2 teaspoon black pepper
1 1/2 glasses water
Peel the eggplants in lengthwise strips at 1 1/2 cm intervals!. Depending on their sizes cut accross into either 2 or 3 pieces and remove the insides of each eggplant!.

Put the margarine and the chopped onions into a pan and saute until the onions are tender!. Add washed rice and 1 glass of water, close the lid and cook for about 10 minutes over moderate heat!. Remove from heat, add the ground meat, salt, black pepper, the peeled-sliced-chopped tomatoes and chopped parsley, mixing all together for about 5 minutes!. Stuff the eggplants with this mixture, place in a pan and cover with a plate!. Add 1 1/2 glasses water and the lemon juice and cook over moderate heat for about 40-50 minutes!. Remove from heat, place in a serving dish and serve!.

1000 gr!. zucchini
2 onions
150 gr!. white cheese
1 glass flour
4 eggs
2 bunches chopped dill
1/2 teaspoon black pepper
1 glass olive oil
salt

Peel and then grate the pumpkins, add the grated onions, chopped dill, eggs, black pepper, white cheese, 2 teaspoons salt and the flour, mix tehm all together!. Heat the olive oil in a frying pan, take 1 tablespoon of the mixture and put into the pan!. Fry both sides, drain away the excess oil and place fritters on a serving plate!. Do you like legume!? you'll find lots of legume recipes in Greek Cuisine!. Lentils is my favourite but I also like chickpeas and bean soup!.
look for lentil soup on the internet or "fakes soupa" (lentil soup in greek)!.
Lentil soup is very easy to make you just boil the stuff for 35-40 minutes!. Some people like to add tomato juice to the pot!.
Personally I like to add bay leaves, garlic, grated onion and a bit of cumin while they are boiling!.
When you serve accompany them with greek feta cheese!.
