A chatsu recipe/marinade?!
I'm barbequeing this weekend and wanted to get a couple of good marinades going!. What brand is best or is there a simple recipe I can make at home!?

I don't think I have ever heard of "Chatsu"!. Do you mean Char Sui!?
Chinese Barbecue Char Siu Marinade
Chinese bbq pork or Cantonese pork is also known as Char Siu, Char Sui, Char Siew, Cha Siu, Cha Sui, Cha Siew, Shao Siu, Shao Sui, Shao Siew, Tsja Siu, Tsja Sui, Tsja Siew, and a few more name variations - all meaning the same thing!.
Anybody with a little bit decent barbecue can easily make this extraordinary and exclusive Chinese barbecue meat at home!
Cha Siew marinade has a striking red colour!.
"Cha Siu" Cantonese Barbecue Pork
The bright red Chinese or Cantonese pork can be made of any pork meat as long as it is not too lean!.
At Chinese restaurants it is commonly made of pork shoulder (or Boston Butt) cut to strips!.
Char Siu Marinade Ingredients
MARINADE ( for 1 2/3 pounds of pork)
3 tbsp (45ml) soy sauce
2 tbsp (30ml) dry sherry
1/4 cup (60ml) hoisin sauce
1 tsp (5ml) fives - spice powder
1 tsp (5ml) sesame paste
1 tsp (5ml) brown sugar
1 slice fresh ginger
1 clove garlic, crushed
3 tbsp (45ml) vegetable oil
dash red food coloring
TO MAKE MARINADE: Combine marinade ingredients in bowl!.
Cut pork into strips 1 1/4 x 6 inches (3 x 15cm)!. Pierce all over with a skewer!. Add to marinade, stirring to coat!. Let stand 1 hour or overnight in refrigerator!.Www@FoodAQ@Com
