Answers:
None of them, actually!. The kits I've seen usually come with a bamboo mat for making sushi rolls, chopsticks, and soy sauce dishes!. Why would I pay $20 (or more) for that!? Chopsticks and the little dishes are very cheap, and who doesn't already have these around the house!? In the meantime the kits don't give include things like a large wooden bowl and rice paddle for actually mixing the sushi rice!. You could use a glass bowl and a spatula, but the wooden bowl helps absorb any extra moisture away from the rice without drying it out - very important as you're mixing in the rice vinegar and wine mixture!.

If you live near an Asian grocery market, or even better, a restaurant supply store that's open to the public, you can go buy your own "sushi kit" for fraction of the cost of the goofy ones you find in stores like Bed Bath and Beyond!.Www@FoodAQ@Com
