Well, it is relatively dry as well!. When you cook them you will notice that they are pastey, not fresh and creamy!. WQhen they are boiled, they dried cheese does absorb some of the moisture, but it makes it pasteyWww@FoodAQ@Com

Dried foods have a long shelf life without refrigeration!. Bacteria thrives in water, so if you remove water, the shelf life increases exponentially!.

Just compare the shelf life of fresh flank steak vs beef jerkey or the shelf life of a grape vs a raisin!.

In fact, you even see some grated cheese that is sold in containers that are not refrigerated!.Www@FoodAQ@Com

They are dehydrated!. The bacteria thrives in moisture!.Www@FoodAQ@Com

My only guess is that oxygen isn't getting to the cheese and causing it to age!.Www@FoodAQ@Com
