Question: Cannoli filling! Can someone please help me!!?!!?
I made cannoli that I have to serve 30 people in 6 hours!. I am freaking out, I follow the recipe to a T and it is still very runny! It wont stay inside the shell!! What do I do!?!?Www@FoodAQ@Com

Did you refrigerate the filling before piping it into the shells!?!? Did you use whole milk ricotta!?

You were supposed to!.!.!. try throwing them in the fridge for a while!.

I'm assuming you took the recipe and had to multiply it for 30 people; you might have miscalculated something!.!.!. also, some recipes don't double, triple or quadruple very well without adding more of a specific ingredient or too!. Not sure what you might have missed her (or what recipe you used) so I'm not sure I can help!. Try adding more ricotta!?Www@FoodAQ@Com

You are often supposed to drain the liquid from ricotta before using it in cannolli recipes!. I place mine in a coffee filter resting in a fine mesh sieve for several hours!. A lot of moisture will drip out and make for a firmer filling!.Www@FoodAQ@Com

what my aunt used to is brown some beef and mix it in with some tomato sauce!. dont heat the sauce too much or it will be runny!. (sorry but the sauce was thicker because it was homemade) but then fill them in the shells cover with cheese and bake!. hope this helpsWww@FoodAQ@Com

Did you use full fat ricotta!? I think your cheese may have gone bad, or you added too much milk!.!.!.!.you are best to start over!. Sorry!Www@FoodAQ@Com

The only thing I can think of is to add some more ricotta cheese to thicken it up!. Make sure to pass it through a strainer first!.Www@FoodAQ@Com
