In many parts of the world, such as ancient China, Southeast Asia and Africa, temperatures were too extreme for cattle herding: too hot, too humid!. They didn't depend on cattle as much as they depended on fishing and farming tropical plants!. In Europe and northern Asia, the climate was ideal for cattle herding, so they consumed much more dairy, including cheese!.

Because the Chinese people lived for so long without consuming dairy, they developed lactose intolerance!. Today, many Asians exhibit these ancestral side effects of lack of dairy in diet!. And this is reflected in their culture: because they don't eat cheese, and can't digest it, they don't use it in their cooking!.

See in India, because they have such a close religious association with cattle, they use butter and cream in the cooking, despite the hot climate!. And in Tibet, which is culturally close to China, it is colder, and they have more yak!. There, a lot of their diet depends on the yak, including its milk!. They make tea and cheese with the milk!.

And of course cheese spread to the Americas with!.!.!.well, the Europeans colonizing the country!. So it seems like most of the world likes cheese, but it's really easy to see why large groups of people never developed a taste for it!.Www@FoodAQ@Com

Western Europe and North America love cheese, but most Asian countries don't give a flip for it

See, historically Europeans were dairy farmers and the Chinese were fishermen and rice farmers!. As a result Europeans/Americans eat lots of dairy products like icecream and cheese, and the Chinese eat the kind of foods/animals that they originally grew in China (like rice, soy)!.

In fact, in China they eat fish for breakfast and fruit for dessert! No french toast or pancakes, and no cake! Especially no cheesecake! ;)Www@FoodAQ@Com

Chinese don't use cheese on their foods!. They produce their own sauces with chilies, vegetables, tofu, soy sauce, etc!.!.

Some Chinese don't like to eat cheese either!. They are not accustomed eating cheese as a part of their meal!.

also, the Chinese should not cheat on their dairy products and not putting other additives and ingredients that are not supposed to be there like melamine, etc!.!.Www@FoodAQ@Com

Many Chinese are lactose intolerant!. Milk is fed to little kids but after childhood, their main calcium source comes from soy products like tofu!. Cheese is very much a western product!. In Japan, they use a little bit of cheese but it's not consumed very often there either!.Www@FoodAQ@Com

Some Chinese restaurants incorporate it into their menus for us round eyed customers!. They usually don't last a long time!. China just didn't get into rotted milk! Hey, I love cheese, but while we say, "Ew!" to all kinds of foods other cultures eat, cheese is pretty yucky if you think about it!.Www@FoodAQ@Com

Cheese isn't popular in Korea, Japan, China, Thailand, or Vietnam!. Why would they include it in their food!.

cheese is not a chinese food!. the chinese food that is similar to cheese will be tofu!. While cheese is made from milk, tofu is made from soya beans!.

It's sure look strange to add cheese into chinese food!. But i understand in US, cheese is added into chinese food to cater for American's platter!. Eg!. Crab ragoon

However there are some Chinese food (in Singapore) that has been fusion to include western's ingredients!. Some example will be cereal prawn and chinese cold dishes that incorporate with mayonnaise (prawn salad with mayonnaise)!. also fried fritters with squid paste in salad cream

I've heard that the U!.S!. would like to expand the market and start selling cheese to China!. Maybe when they taste a good product they will enjoy it and start to use more of it!.Www@FoodAQ@Com
