Should you remove the green skins from mung bean sprouts?!

Not only too much hard work but you loose a lot of the nutritious elements that go with legume skins,restaurants however serve pearly with bean sprouts without a trace of skin ,i have always wondered how they do this,for the housewife or home cook however nothing gained by adding a laborious process when not really needed!.Www@FoodAQ@Com
I never remove anything from bean sprouts!. They are good to go as is!Www@FoodAQ@Com
