I am a former chef and worked in Japan, and not to be nasty teriyaki does not cook the fish, sorry to the first fellow, it is a marinade with soya sauce, garlic, ginger, rice wine and seasonings!. Unless they use a ton of wine or vinegar the fish will not cook in the acid, it will however have a flavouring to it, and if you wanted you could use it for sushi or sashimi, it would be fine, but store marinated fish is not fresh, it can be in the flavouring agent for days before you purchase it!.

Unless it specifically says "Sushi Grade" on the label, it's not intended to be eaten raw!.

Anyways, the teriyaki sauce will make it too salty to eat raw!. You really want to cook it to help reduce the saltiness!.Www@FoodAQ@Com

No, sushi fish is much fresher than the 'average' fish you get at the store!. also since its marinated you maybe can't smell too well if its off at all!?
