What does Scottish plain bread look like? How does it taste?!


Question: What does Scottish plain bread look like!? How does it taste!?
Answers:
Firstly the loaf is a different shape much more rectangular shaped slices approx 16cm tall by 9cm wide, with a dense crust at top and bottom but no crust at the edge!. The top crust is slightly arched!.
This is because unlike the usual sliced loaf which is called pan loaf as it is baked individual in a loaf tin (pan), it is baked as a batch loaf where a whole tray is filled with the loaves just touching each other!. Imagine baking bread rolls and the dough for each roll rises in such a way that the edges of each roll bakes against the next but easily separates!. However the loaves are baked a little bit more tightly together causing the dough to rise more upwards and hence the rectangular shape!. As the tray is dense in bread dough it takes a bit longer/hotter oven to bake than a pan loaf hence the denser and usually darker crust on top and bottom!.
The texture of plain bread is more dense due to the way the rise is restricted so is not so full of air like some breads!. It is more filling than pan loaf!. It is lovely toasted (with butter!) but I find it a little too dense for a sandwich but this is probably due to our palates being more used to a lighter bread!.Www@FoodAQ@Com

It has a crust only on the top and bottom!. There is no crust on the sides due to the unbaked loaves being stuck together in batches, baked together then torn into individual loaves afterwards!.

It's quite tall, for a loaf!.Www@FoodAQ@Com
