Authentic Mexican Cookbooks?!
Know of any really good authentic mexican cookbooks!?Www@FoodAQ@Com
Answers:
Okay, I cook authentic mexican every single day of my life (husband from tepatitlan jalisco), and I have many many mexican cookbooks!.
It is so funny what publishers think is actually real mexican food!. Most cookbooks are some messed up version of what a publisher thinks americans would like to cook (burritos, chimichangas, spanish rice)
First, the best of all cookbooks is, sadly, out of print, but can be easily purchased on amazon!.com or sometimes ebay for not too much money!. It is made by ortho books, and is called "Adventures in Mexican cooking"!. There aren't tons of recipes, but the recipes they give are authentic!. There are lots of photos as well!. It's a paperback, not too thick, but well worth the $$!.
Second, if you ever look for a cookbook (a good one) from mexico, written in spanish, you might not find one!. Recipes are passed between people there, not written in cookbooks!. I'll be sure to add a comment to your question if I ever find one!.
Now, if I may give a little more advice before you go out to spend money on books: Diana Kennedy is well known for her mexican cookbooks!.!.!.!.big thick hardbacks full of what many mexicans would raise an eyebrow at!.
While her books offer some scrumptious recipes, many of her recipes clearly come from mexican women who don't want to give their secret recipes out, so Diana Kennedy had to guess at what the ingredients were in her own kitchen!. This makes for some recipes with sooo many ingredients and procedures that are unnecessary!.
Don't get me wrong!. I can't live without some of her recipes!. You just need to figure out how ready you are to toast, seed, boil, blend, fry and stew!.!.!.!.!.and all that for one cup of sauce!.
95% of her recipes are not commonly eaten in Jalisco, which is about the most mainstream, typical mexican state!. Most of her recipes seem to come from oaxaca and yucatan, which are basically a world apart from jalisco dining!. Again!.!.!.I'd recommend checking out her books at your library first, then deciding which is best!. I recommend this because her books are upwards of $30 each!. I only use one of her books, and I have 3!. two of them sit on the shelf collecting dust!.
Definitely go out an spend the money on the ortho book!.
If I ever publish a mexican cookbook, I'll be sure to let you know!Www@FoodAQ@Com

He's not Mexican, but Rick Bayless has written some of the
best Mexican cookbooks I've read (at least the ones in English)!.
His restaurants in Chicago, Frontera Grill and Topolobampo(!?), are
as close to real Mexico as you'll find if you're looking for higher
end!. Diana Kennedy has written a couple of decent books as well!.
It all really depends on what kind of cuisine you're looking for!. There
are so many different regions of Mexico that it's impossible to nail
"Mexican" food into one specific style!. Coastal regions have distinctly
different cuisines than do the interior, Yucatan cuisine is certainly
different that that of Jalisco, Oaxaca, or Puebla!.
I'd recommend starting with Bayless' "Mexico: One Plate At A Time"
as a good overall starting point!.Www@FoodAQ@Com
