Stewed Lamb/Chicken - Trinidad/Carribean Style Recipe?!
Hi I had trini mates who got me hooked on carribean food and have moved again!.
Does anyone have any idea how to make the marinade and how to cook stewed chicken!? All I remember is marinade, sugar in the pan and er!.!.!. thats it!

basically the marinade is what we call green seasoning - made from chives, garlic, culantro (substitute cilantro), seasoning peppers maybe some lime and other green stuff like parsley etc to your taste!. Grind that up, mix it into the chicken and let it marinate for a couple hours or overnight!.
and the sugar in the pot is to make browning to give it the colour and rich flavour - let the sugar melt and bubble till it's a golden brown, then move quickly because it can go dark and burn fast!Www@FoodAQ@Com
