I am not sure if it would matter the kind of sesame seeds!. I make tahini sauce quite often to put in a falafel sandwich!. I have used the common white seeds, yellowish brown seeds, and black seeds!. I know that you can use either hulled or unhulled seeds!. The darker the seed you use, the more of a stronger flavor you will have!. When I have used black seeds, the flavor is very nutty and robust, as opposed to the lighter sesame seeds, that have a very neutral flavor!. All in all Tahini is good stuff no matter what! That stuff if good on everything- including use as a dip! :)Www@FoodAQ@Com
