Mexican Casserole
Small corn or flour tortillas - about 12 or so
1 1/2 pound ground beef
1 large pack grated cheddar cheese or grate about 6 cups or more
1 large or 2 small cans enchilada sauce
1 can rotel tomatoes w/green chilies
2- 3 cups chopped onion
3 tablespoons or more cumin powder (I use alot of this)
In a pot, brown your ground beef and drain excess grease!. Put your onion in, 1/2 can of rotel tomatoes and your cumin in, let cook for about 15 minutes!. Remove from heat and put to cool!. Take a 9 X 13 pan and take your corn tortillas and on a plate, add a little meat mixture onto the tortilla, and then add some cheese and roll each one up and put side by side in pan, until pan is full!. You can spoon any meat mixture left over (if any) on top of tortillas, and then pour your enchilada sauce over all and add left over cheese, you should completely cover the top!. Cover pan with aluminum foil and bake at 350 degrees for about 15 minutes, take off foil and let bake another 10 or 15 minutes or until cheese starts to brown in spots!.Www@FoodAQ@Com

Place in a greased Pyrex a layer of tamales (green sauce), a layer of shredded chicken breast, a layer of green salsa, a layer of grated mozzarella!. Place in oven until cheese is golden brown!.
Serve with refried black beans, if using canned beans, you can fry finely chopped onions, and add the beans with one or two tablespoons of milk, this will eliminate the "canned flavor"!.

in thick pan,medium flame, heat flour tortillas on 2 sides for1 minute each side!.put slices of cheese that melts,fold torilla ,let heat tilll cheese melts!.
place on plate ,open and put:salsa,sour cream,mashed avocado!.enjoy!Www@FoodAQ@Com
