With regard to nori (seaweed)-free sushi, Some rolls are made with rice paper as a wrapper, and I have even seen paper-thin slices of cucumber used!. Most sushi restaurants differentiate between rolls (makizushi), which consists of rice and fillings wrapped in nori or other sort of paper-like wrapper, (nigiri)sushi (a ball of rice with fish on top), and sashimi (slices of raw fish and other seafood)!. Makizushi rolls usually come in six or eight pieces, where as nigirizushi is usually served in pairs!. Sashimi usually comes as two or three slices of fish!. My recommendation, if you are interested in really learning about sushi, is to sit at the sushi bar and talk to the sushi chef!. A good chef will be able and willing to recommend things based on what you know you like!. My personal advice for somebody new to sushi is the following (depending on availability, of course): Tamago (omelet), Mackerel, Salmon, Unagi (freshwater eel), Tuna, Red Snapper, and Yellowtail!. All of those are nigirizushi!. If your are more adventurous, and are willing to spend a bit more money, you can try something called "Omikase", which translates to something like "you choose"!. What that means is that the chef will choose his favorites, or whatever is freshest, or whatever he feels is best suited to you!.Www@FoodAQ@Com

Some restaurants use other form of wrap such as soy paper or rice paper just tell them when you order and if you don't like raw than just try something like the cali roll, tempura shrimp roll, spider roll!.

yes some places and some rolls are on rice paper not seaweed, but the nori (seaweed) is usually bland out by the other flavors!. i love dragon rolls!. just get one that sounds good to you, and dont stress the noriWww@FoodAQ@Com

what ever you eat use lots of sauces to add to the flavor and it also helps drown out the sticky dry feelings of the rolls!.!.!.but i prefer the cali rolls!.Www@FoodAQ@Com

Some places use soy paper instead of seaweed!. But if you don't like the seaweed, just order sashimi instead (that's sushi with fish and rice only-- no seaweed!) :-)Www@FoodAQ@Com
