stay away from seafood and pork. this usually encompasses Asian cuisine so i don't think Thai is good. Jews eat steak so thats ok, but i think Italian would be better because pasta and dairy products have a lesser chance of being treated "unkosherly" when made. Meat requires specific animals and for them to be killed in a specific way

buy a frozen kosher dinner[from any large supermarket] and serve it un opened with a nice paper plate and plastic utensil's..you must ask him first and try for an hecher that is orthodox...look at the jewish stamp...serve a can of coke unopened and cold..and a paper cup.or nice disposable plastic..the main thing is not to embarrass him and if he is very strict he will not want to eat with food around him that is not kosher...communicate..he does not mind what you eat[try to stay away from pork and shellfish,bacon ham....even entenmanns with a cup of coffee[have him open the box]..and have paper ware and plastic available. theres lots of kosher goodies available..make sure it is unopened!...coffee and a kosher brownie...makes me happy! oh, and try for a pareve goodie incase he had some sort of dairy snack or breakfast....and non dairy creamer.
this is very kind and sensitive of you. i would go with sandwiches, because you cant really see what's in them. so they could even be pork or meat with cheese, but your co-worker won't even see what is in them. otherwise you could do pizza, but not with a meat topping. steak would also be fine.
it would be nice to have something for your co-worker to eat. ask him if you can get some cookies or crackers or pretzels, or fresh fruit. he can tell you which brands are kosher. kosher snacks are available in any grocery store in the united states. also, he can have a cold drink in a paper cup. water or soda is good.

Pork and shell fish are unclean. Any fish that does not have scales and fins is unclean.
If he is Jewish and follows old testament teachings then he want eat meat because the way it is killed and because it has blood and fat. Veggies without lard or meat in it should be okay
My grandfather was a Rabbi. He and Grandmother kept kosher.
They ate fish with scales at restaurants. They would request baked potato, no toppings.
They ate plain vegetables, and black coffee or tea.
