Well, because people know how to cook their own country's food correctly. I find it much tastier if a Chinese cook made Chow Mein or if a Japanese made sushi. The people who hire the workers also will be able to speak with them and show them what to do.

The answer is very simple.

If I stepped into a Japanese restaurant and said "asahi ji bo" to the non-Japanese waiter/waitress, he/she might not understand me. If I stepped into a Chinese restaurant and said "Yi ping qing dao" to the non-Chinese waiter/waitress, he/she might not understand me too. Hiring people who could speak Japanese or Chinese makes sense because there are non-English speaking customers too. :)

By the way, when I visited Denmark and Sweden, I saw quite a bit of Chinese and Japanese restaurants with 100% non-Oriental crews. The most interesting place I saw was in Stockholm. I saw a big, bald white guy flipping a wok in front of his tiny fast food Chinese restaurant by the street. The whole setup of the place was very "China" especially that street front open kitchen. However, when you include that big, bald white cook/owner and his all white crew in the picture, things will suddenly look... odd. LOL



in america you mean? i have found, in my city anyway, that many time they are working illegally for about 2 dollars an hour, working 7 days a week, sharing quarters with all thier coworkers. then they send all their momney back to china to thier family. its sad, but a tight network thats tough to break.



i heard rumors that our chinese servers were bussed in from new york city and were illegal..they all seem happy and not over worked but the cashier...wow..she acts like she is guarding fort knox and its all business.she must be the' house momma.'shes got..steely eyes watching every move like a hawk.



Not where I live. Most of the cooks I see are Mexicans or Central Americans and very few of the Chinese or Japanese restaurants have asian cooks.



I'm not sure I'd trust the food at a Chinese or Japanese restaurant that didn't have a lot of Asians working in it.



well, you kinda don't expect asian owners to hire other people rather than asians
