What is in those metal steamers on the Chinese Buffet?!

Question: What is in those metal steamers on the Chinese Buffet?
For years, I would visit the chinese buffet by my house, pick out my favorites and ignore the rest. But then I got older and became bored with just getting something brown and fried over rice. And so one day I noticed some metal steamers sitting off to the side with lids on top. When I looked inside I found, some sort of a lemon dumpling (sweet, but not very sweet), some sort of tiny, white meat on a bone, and another type of meat which I think was either squid or tripe. What are these dishes? Now that I've discovered them I've seen them at multiple places. So, two questions; what are they and what are they called?

Answers:

in general dishes like that are refereed to as Dim Sum

For the most part a typical Chinese buffet would not offer tripe or squid.
Buffets are sort of gross in my mind and cater to cheap people who want bargains rather than quality food so I don't frequent them.
Explore a restaurant with a menu and enjoy a fresh cooked dish rather than some gummy mess in a chafing dish.

I don't know, but I'll tell you what, if you can not recognize food by vision or smell, then you'd best leave it in the pot.

Why don't you just ask someone who works there....or even another diner who is getting a serving of the mystery dish.
