Question: What is the difference between white wine vinegar and balsamic white vinegar?
trying to make sweet and sour sauce getting crap results

Balsamic White vinegar ( expensive) is made from a reduction of cooked white Trebbiano grape juice and has a very high acid ratio.

White wine vinegar is made from wine and has a lower acid ratio.

Regular Balsamic vinegar from the store is a little higher than the white wine but lower than the really expensive stuff.

If you are looking for a deeper sour taste to your recipe (especially if asian) use a rice wine vinegar. If wanting an even tarter taste, try apple cider vinegar at 1/4 as much as called for.
